Vegan truffle, sweet temptation

If you are vegan or getting there, we've got news for you: Your relationship with ice cream doesn't have to be restricted to sorbets. We've been working hard at Baboia and we've finally got the creamiest proposition for the biggest chocolate lovers, but 100% animal-free: vegan truffle ice cream! If there is one kind of chocolate that's best suited to colder weather, it's truffle... turned into ice cream: truffle all year round!

The origin of the chocolate truffle is attributed to a French chocolatier in 1895. Its name refers to the Black Truffle, and to emulate it, it was given an irregular, rough and dark appearance, sprinkling it with cocoa to simulate the earth that the mushroom is extracted from.
Truffles also appear in an array of dishes in modern Catalan cuisine including sea bass with truffles, mashed potatoes with truffles, and vegetables with truffles.
The city of Vic hosts the only dedicated truffle market in the whole of Spain, where the product is both bought and sold. Visiting Vic is always a good idea. Located in a completely flat terrain that makes it very easy to explore the area by bicycle, Vic has a packed cultural calendar, and the Vic Live Music Festival in September is a real highlight. From Barcelona it's as simple as grabbing an ice cream from Baboia, strolling to the train station and reaching Vic on one of the lines that cross some of Catalonia's most stunning landscapes.
