Meringued Milk

Meringue milk is a real delicacy rooted in Catalonia and, curiously, the basic recipe has not changed over the years: it consists of milk and egg white, usually sweetened with sugar and flavoured with cinnamon. In Baboia's recipe, though, we do away with the egg in favour of citrus fruits. It is usually served very cold so that part of the drink is partially frozen and with a texture resembling snow. So what better ice cream than meringue milk!

The drink is already described in the fourteenth century Catalan book ‘Speculum al foder’, considered to be the Kama Sutra of the Western world. It is presented as an aphrodisiac with surprising effects!
